- 1 1 cup rolled oats
- 1/2 1/2 cup almond flour
- 1/4 1/4 cup honey or maple syrup
- 1/4 1/4 cup coconut oil, melted
- 1/2 1/2 teaspoon vanilla extract
- 1/2 1/2 teaspoon baking soda
- 1/4 1/4 teaspoon salt
- 1/2 1/2 cup dark chocolate chips or dried fruit
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, almond flour, baking soda, and salt.
- In another bowl, mix together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the dark chocolate chips or dried fruit.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store cookies in an airtight container at room temperature for up to 5 days.
- These cookies can be customized by adding nuts, seeds, or different types of chocolate.
