Ingredients

- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.
- Add the feta cheese and olives to the bowl.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
