- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- 1 lime, juiced
- 1 teaspoon lime zest
- Salt and pepper to taste
- 1 avocado, diced
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Pour in the coconut milk and vegetable broth, stirring to combine. Bring to a simmer.
- Add lime juice and lime zest, then season with salt and pepper to taste. Let simmer for 10 minutes.
- Remove from heat and blend the soup until smooth using an immersion blender or a regular blender.
- Serve the soup warm, topped with diced avocado and fresh cilantro.
Notes
- For a spicier version, add chopped jalapeños or red pepper flakes.
