- 2 boneless, skinless chicken breasts
- 8 oz fettuccine pasta
- 1/2 cup heavy cream
- 1/4 cup coconut milk
- 1/4 cup grated Parmesan cheese
- 2 tbsp lemon juice
- 1/2 cup crumbled feta cheese
- 1 tsp chili flakes
- 1 cup green beans, trimmed
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken with salt and pepper. Heat 1 tbsp olive oil in a pan and cook chicken until golden and cooked through, about 6-7 minutes per side. Slice and set aside.
- In the same pan, add green beans and sauté until tender-crisp, about 4-5 minutes. Sprinkle with grated Parmesan and cook until crispy. Set aside.
- In a saucepan, heat remaining olive oil and sauté garlic until fragrant. Add heavy cream, coconut milk, lemon juice, and chili flakes. Simmer for 3-4 minutes.
- Stir in feta cheese until melted. Toss cooked pasta in the sauce.
- Divide pasta among plates, top with sliced chicken and crispy green beans.
Notes
- Substitute Greek yogurt for heavy cream for a lighter version.
- Adjust chili flakes to your preferred spice level.
- Use gluten-free pasta if needed.
