- 1 cup shredded coconut

- 1/4 cup cornstarch
- 2 cups milk
- 1 tsp vanilla extract

Instructions
- Preheat oven to 350°F (175°C).
- Bake pie crust for 10 minutes.
- Mix eggs, sugar, cornstarch, milk, vanilla, and salt in a bowl.
- Stir in shredded coconut.
- Pour mixture into pre-baked pie crust.
- Bake for 40-45 minutes until set.
- Cool before serving.
