- 1 cup (240ml) sweetened condensed milk
- 1/2 cup (115g) unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 cups (240g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (80g) sweetened shredded coconut
- 1/2 cup (100g) granulated sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and sweetened condensed milk until smooth and well combined.
- Add the vanilla extract and mix until incorporated.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the shredded coconut until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, portion out the dough and roll into balls.
- Roll each ball in granulated sugar to coat, then place them on the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes, or until the edges are lightly golden. The centers will appear soft.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For an extra burst of flavor, try adding chocolate chips or nuts to the cookie dough.
- Store the cookies in an airtight container at room temperature for up to a week.
