Ingredients

  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and then add the milk, vegetable oil (or melted butter), and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Lightly grease the waffle iron with non-stick cooking spray or brush with oil.
