  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup strawberry glaze (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
  3. Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and then remove from the oven to cool.
  4. In a large mixing bowl, beat cream cheese until smooth and creamy. Gradually add 1 cup sugar and vanilla extract, mixing until well combined.
  5. Add eggs one at a time, mixing well after each addition. Then add sour cream and flour, mixing until just combined. Do not overmix.
  6. Pour the cheesecake batter over the cooled graham cracker crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool gradually for 1 hour.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.
  9. Before serving, top with fresh strawberries and drizzle with strawberry glaze if desired. Slice and enjoy!
