Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup strawberry glaze (optional)
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
- Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and then remove from the oven to cool.
- In a large mixing bowl, beat cream cheese until smooth and creamy. Gradually add 1 cup sugar and vanilla extract, mixing until well combined.
- Add eggs one at a time, mixing well after each addition. Then add sour cream and flour, mixing until just combined. Do not overmix.
- Pour the cheesecake batter over the cooled graham cracker crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool gradually for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.
- Before serving, top with fresh strawberries and drizzle with strawberry glaze if desired. Slice and enjoy!
Notes
- For a smoother texture, ensure all your ingredients are at room temperature before mixing.
- You can substitute the sour cream with Greek yogurt for a lighter version.
- This cheesecake can be made a day in advance and stored in the refrigerator.
