Ingredients

  • 1 lb Ground beef
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 medium Bell pepper, diced
  • 1 can (14.5 oz) Canned diced tomatoes
  • 1 can (8 oz) Tomato sauce
  • 1 can (15 oz) Kidney beans, drained and rinsed
  • 2 tablespoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 box Cornbread mix
  • as needed Milk (for cornbread)
  • 1 Egg (for cornbread)

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Sauté until the vegetables are soft.
  3. Stir in the canned diced tomatoes, tomato sauce, kidney beans, chili powder, cumin, salt, and black pepper. Bring to a simmer.
  4. Reduce the heat to low and let the chili simmer for at least 30 minutes, stirring occasionally.
  5. Preheat the oven according to cornbread package instructions. Prepare the cornbread batter by mixing the cornbread mix, milk, and egg.
  6. Pour the cornbread batter into a greased baking pan and bake according to package instructions.
  7. Serve the chili hot, topped with cornbread.

Notes

  • Feel free to add additional spices such as cayenne pepper for extra heat.
