  • 1/4 cup unsalted butter, melted (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the sugar, egg, buttermilk, melted butter, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 15-18 minutes, or until a toothpick inserted comes out clean.
  7. Let the muffins cool slightly, then dip the tops in melted butter and roll in the cinnamon-sugar mixture.
