- 500g Brussels sprouts, halved
- 300g carrots, sliced
- 300g parsnips, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp honey
- 1 tbsp chopped fresh rosemary
Instructions
- Preheat your oven to 200°C (400°F).
- Toss all vegetables with olive oil, salt, and pepper in a large bowl.
- Spread the vegetables evenly on a baking tray.
- Roast for 25 minutes, stirring halfway through.
- Drizzle with honey and sprinkle rosemary over the vegetables.
- Return to the oven for 5 more minutes until caramelized.
- Serve warm.
