Ingredients

- 2 cups Brussels sprouts, halved
- 1 cup cranberry sauce
- 4 medium potatoes, peeled and diced
- 1/2 cup butter
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, salt, and pepper.
- Spread Brussels sprouts on a baking sheet and roast for 20 minutes.
- In a pot, boil potatoes until tender, about 15 minutes.
- Drain potatoes and mash with butter, garlic, salt, and pepper.
- Stir in Parmesan cheese until well combined.
- Serve cranberry sauce alongside the Brussels sprouts and mashed potatoes.
Notes
- Adjust seasoning to taste.
- For a vegan option, substitute butter with olive oil.
- Make the cranberry sauce from scratch if preferred.
