  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add arborio rice, stirring to coat with oil.
  4. Pour in white wine, cook until absorbed.
  5. Add seafood stock gradually, stirring constantly.
  6. When the rice is nearly cooked, add prawns, scallops, mussels, and squid.
  7. Cook until seafood is done, about 5-7 minutes.
  8. Stir in parmesan cheese, salt, and pepper.
