Ingredients

- 1 kg prawns, peeled
- 500 g scallops
- 1 kg mussels
- 500 g squid, cleaned and sliced
- 2 cups arborio rice
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup white wine
- 4 cups seafood stock
- 1 cup grated parmesan cheese
- 2 tablespoons olive oil
- Fresh parsley, chopped
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add arborio rice, stirring to coat with oil.
- Pour in white wine, cook until absorbed.
- Add seafood stock gradually, stirring constantly.
- When the rice is nearly cooked, add prawns, scallops, mussels, and squid.
- Cook until seafood is done, about 5-7 minutes.
- Stir in parmesan cheese, salt, and pepper.
- Garnish with parsley before serving.
