A festive pasta salad perfect for Christmas gatherings. This colorful dish combines tender pasta, fresh vegetables, and a tangy dressing.

- 12 oz pasta (rotini or bowtie)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/3 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine pasta, tomatoes, cucumber, red onion, olives, feta, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently to coat.
- Refrigerate for at least 1 hour before serving.
Notes
- Add grilled chicken for extra protein.
- Substitute feta with goat cheese if preferred.
- Best served chilled.
