Ingredients

- 12 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup green bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine pasta, tomatoes, olives, bell pepper, red onion, and feta cheese.
- In a small bowl, whisk olive oil, balsamic vinegar, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Sprinkle fresh parsley on top before serving.
Notes
- Chill for at least 1 hour for better flavor.
- Add grilled chicken or shrimp for extra protein.
- Substitute feta with mozzarella if preferred.
