Ingredients

- 4 eggs
- 1 cup milk
- 1 cup shredded cheese
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together eggs and milk.
- Add cheese, bell peppers, onions, salt, and pepper to the egg mixture.
- Heat olive oil in a skillet over medium heat.
- Pour the mixture into the skillet and cook for 5 minutes.
- Transfer the skillet to the oven and bake for 15 minutes.
- Remove from oven and let cool for a few minutes before serving.
Notes
- Feel free to add other vegetables.
- Serve with toast or pancakes.
- Can be made ahead and reheated.
