Ingredients

- 1 cup cherry tomatoes, halved

Instructions
- In a large bowl, combine diced cucumber, cherry tomatoes, red onion, and parsley.
- In a separate small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the vegetable mixture and toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold and enjoy.
