Instructions
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan.
- Bake crust for 10 minutes, then let cool.
- Beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each.
- Pour filling over crust and bake for 45-50 minutes.
- Let cheesecake cool, then refrigerate for at least 4 hours.
- Whip heavy cream, powdered sugar, and peppermint extract until stiff peaks form.
- Divide whipped cream and tint with red and green food coloring.
- Spread or pipe whipped cream on top and garnish with crushed candy canes.
