Ingredients

- 8 slices of bread
- 6 eggs
- 1 cup of milk
- 1 cup of shredded cheese
- 1 cup of chopped vegetables (bell peppers, onions, spinach)
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté chopped vegetables until soft.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Layer bread slices in a baking dish.
- Add sautéed vegetables and shredded cheese over the bread.
- Pour the egg mixture over the bread and vegetables.
- Bake for 30 minutes or until the egg is set.

- Feel free to add your favorite herbs.
- Serve with fresh fruit.
