Description

A classic chocolate soufflé with a warm fudge center. Light, airy, and decadent.


Ingredients

Scale
  • 4 oz dark chocolate (70% cocoa)
  • 2 tbsp unsalted butter
  • 1/4 cup granulated sugar
  • 2 large eggs, separated
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tbsp cocoa powder (for dusting)

Instructions

  1. Preheat oven to 375°F (190°C). Grease two ramekins and dust with cocoa powder.
  2. Melt chocolate and butter in a double boiler. Stir until smooth.
  3. Whisk egg yolks with half the sugar until pale. Fold into melted chocolate.
  4. Beat egg whites with cream of tartar until soft peaks form. Gradually add remaining sugar.
  5. Gently fold egg whites into chocolate mixture. Add vanilla and salt.
  6. Divide batter into ramekins. Bake for 12-14 minutes until risen.
  7. Serve immediately.

Notes

  • Use room-temperature eggs for best results.
  • Do not open the oven while baking.
  • Serve immediately to prevent collapse.
