- 3 large eggs
- 2 tbsp sugar
- 1 tsp vanilla extract
- 200ml heavy cream
- Pinch of salt
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water. Let it cool slightly.
- Separate the egg yolks from the whites. Beat the yolks with sugar until pale.
- Whip the heavy cream until soft peaks form.
- Gently fold the melted chocolate into the egg yolk mixture.
- Add the vanilla extract and a pinch of salt.
- Beat the egg whites until stiff peaks form.
- Carefully fold the whipped cream into the chocolate mixture, then fold in the egg whites.
- Divide the mousse into serving cups and refrigerate for at least 2 hours.
