- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- 1/4 cup vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 1/4 cup sugar
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1/2 teaspoon red pepper flakes
- 2 green onions, sliced for garnish
- Sesame seeds for garnish
Instructions
- In a bowl, combine cornstarch, salt, and pepper. Dredge chicken pieces in the cornstarch mixture until well coated.
- Dip the coated chicken into the beaten eggs and let excess drip off.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken pieces in batches, cooking until golden and crispy. Remove and set aside.
- In the same skillet, add garlic and ginger. Sauté for about 30 seconds until fragrant.
- Add soy sauce, sugar, rice vinegar, sesame oil, and red pepper flakes. Stir until sugar dissolves and sauce thickens slightly.
- Return the chicken to the skillet, tossing to coat in the sauce. Cook for an additional 2 minutes.
- Garnish with sliced green onions and sesame seeds before serving.
