A quick and easy chicken stir fry recipe that’s packed with flavor and loaded with vegetables.

- 1 pound boneless, skinless chicken breast, sliced into thin strips
- 2 tablespoons vegetable oil
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce (optional)
- 1 tablespoon cornstarch
- 1/4 cup water
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken and season with salt and pepper. Stir-fry until the chicken is cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the mixed vegetables, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and water until smooth.
- Return the chicken to the skillet and pour the sauce over the chicken and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.
- Serve hot over cooked rice or noodles.
Notes
- Feel free to customize the vegetables based on your preference or what you have on hand.
- For added spice, consider adding red pepper flakes or sriracha to the sauce.
