Ingredients

  • 1 pound boneless, skinless chicken breast, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken and season with salt and pepper. Stir-fry until the chicken is cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Add the mixed vegetables, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and water until smooth.
  5. Return the chicken to the skillet and pour the sauce over the chicken and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.
  6. Serve hot over cooked rice or noodles.

Notes

  • Feel free to customize the vegetables based on your preference or what you have on hand.
