- 2 lbs chicken thighs, boneless and skinless, cut into chunks
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 celery stalks, sliced
- 4 cups chicken broth
- 1 cup potatoes, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the chicken chunks and cook until browned on all sides.
- Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
- Stir in the sliced carrots and celery, cooking for about 5 minutes.
- Pour in the chicken broth and add the diced potatoes, thyme, rosemary, salt, and pepper.
- Bring the stew to a boil, then reduce heat to low and let simmer for 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
- Adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
- For a thicker stew, you can add a slurry of cornstarch and water during the last few minutes of cooking.
- Feel free to add other vegetables like peas or green beans for extra nutrition.
