  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chicken chunks and cook until browned on all sides.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in the sliced carrots and celery, cooking for about 5 minutes.
  4. Pour in the chicken broth and add the diced potatoes, thyme, rosemary, salt, and pepper.
  5. Bring the stew to a boil, then reduce heat to low and let simmer for 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Adjust seasoning as needed. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker stew, you can add a slurry of cornstarch and water during the last few minutes of cooking.
