A comforting and hearty homemade chicken soup recipe that brings warmth to any meal.
Ingredients

- 1 whole chicken (3–4 lbs), cut into pieces
- 8 cups chicken broth
- 4 medium carrots, sliced
- 3 celery stalks, sliced
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups egg noodles (optional)
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, combine the chicken pieces and chicken broth. Bring to a boil over medium-high heat.
- Reduce heat to low and let simmer for about 30 minutes, skimming off any foam that rises to the surface.
- Add the carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper to the pot. Stir to combine.
- Continue to simmer for another 30-40 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the pot and let cool slightly. Once cool, shred the chicken meat, discarding the bones and skin.
- Return the shredded chicken to the pot. If using egg noodles, add them now and cook according to package instructions.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
- Feel free to add other vegetables like peas or corn for extra nutrition.
- This soup can be stored in the refrigerator for up to 4 days or frozen for longer storage.
