Ingredients

  • 1 whole chicken (34 lbs), cut into pieces
  • 8 cups chicken broth
  • 4 medium carrots, sliced
  • 3 celery stalks, sliced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups egg noodles (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, combine the chicken pieces and chicken broth. Bring to a boil over medium-high heat.
  2. Reduce heat to low and let simmer for about 30 minutes, skimming off any foam that rises to the surface.
  3. Add the carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper to the pot. Stir to combine.
  4. Continue to simmer for another 30-40 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken from the pot and let cool slightly. Once cool, shred the chicken meat, discarding the bones and skin.
  6. Return the shredded chicken to the pot. If using egg noodles, add them now and cook according to package instructions.
  7. Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.

Notes

  • Feel free to add other vegetables like peas or corn for extra nutrition.
  • This soup can be stored in the refrigerator for up to 4 days or frozen for longer storage.
