Description
A comforting and hearty chicken soup made with tender chicken, fresh vegetables, and flavorful broth. Perfect for warming up on a chilly day.

- 1 whole chicken (about 3–4 pounds)
- 8 cups water
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 cup frozen peas
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, combine the whole chicken, water, salt, and pepper. Bring to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for about 1 hour, or until the chicken is cooked through.
- Remove the chicken from the pot and let it cool slightly. Strain the broth and return it to the pot.
- Add the carrots, celery, onion, garlic, bay leaf, thyme, and parsley to the strained broth. Simmer for 15-20 minutes until the vegetables are tender.
- While the vegetables are cooking, remove the skin and bones from the chicken and shred the meat into bite-sized pieces.
- Add the shredded chicken back into the pot along with the frozen peas. Cook for an additional 5 minutes.
- Remove the bay leaf, and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
