- 1 whole chicken (about 3–4 lbs), cut into pieces
- 8 cups water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup egg noodles (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, combine the chicken pieces and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to medium-low and skim off any foam that rises to the top.
- Add the carrots, celery, onion, garlic, thyme, bay leaf, salt, and pepper. Cover and simmer for about 1 hour, or until the chicken is cooked through.
- Remove the chicken from the pot and let it cool slightly. Discard the bay leaf.
- Once cooled, shred the chicken into bite-sized pieces, discarding the skin and bones.
- Return the shredded chicken to the pot. If using, add the egg noodles and cook according to the package directions.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

- Feel free to add other vegetables like peas or corn for extra flavor.
