Ingredients

  • 1 whole chicken (about 34 lbs), cut into pieces
  • 8 cups water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup egg noodles (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, combine the chicken pieces and water. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium-low and skim off any foam that rises to the top.
  3. Add the carrots, celery, onion, garlic, thyme, bay leaf, salt, and pepper. Cover and simmer for about 1 hour, or until the chicken is cooked through.
  4. Remove the chicken from the pot and let it cool slightly. Discard the bay leaf.
  5. Once cooled, shred the chicken into bite-sized pieces, discarding the skin and bones.
  6. Return the shredded chicken to the pot. If using, add the egg noodles and cook according to the package directions.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
