  • 2 cloves garlic, minced

  • 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup spinach or kale, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, grated ginger, and grated turmeric. Cook for an additional 1-2 minutes until fragrant.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the sliced carrots and celery, and continue to simmer for 10-15 minutes until the vegetables are tender.
  5. Stir in the shredded chicken and chopped spinach or kale. Cook for another 5 minutes until the greens are wilted.
  6. Season with salt, pepper, and lemon juice to taste.
  7. Serve hot, garnished with fresh parsley if desired.
