- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 cup spinach or kale, chopped
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, and grated turmeric. Cook for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add the sliced carrots and celery, and continue to simmer for 10-15 minutes until the vegetables are tender.
- Stir in the shredded chicken and chopped spinach or kale. Cook for another 5 minutes until the greens are wilted.
- Season with salt, pepper, and lemon juice to taste.
- Serve hot, garnished with fresh parsley if desired.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- Feel free to add other vegetables such as bell peppers or zucchini.
- For a spicier kick, add a pinch of red pepper flakes.
