A warm and comforting chicken soup.


Ingredients

  • 1 whole chicken, cut into pieces
  • 4 cups chicken broth
  • 2 cups water
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 bay leaves
  • 1 cup egg noodles (optional)

Instructions

  1. In a large pot, combine chicken, broth, and water.
  2. Add onion, carrots, celery, garlic, thyme, salt, pepper, and bay leaves.
  3. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove chicken, shred meat, and return to the pot.
  5. If using, add egg noodles and cook until tender.
  6. Remove bay leaves before serving.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • Freeze for longer storage.
