Description

Chicken Shawarma is a Middle Eastern dish featuring tender, spiced grilled chicken thighs sliced thin and piled high on a plate. It’s perfect for wraps, salads, or served with rice and garlic sauce.


Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1/2 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, cumin, paprika, turmeric, coriander, cinnamon, black pepper, and salt.
  2. Add chicken thighs to the marinade, ensuring they’re fully coated. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat grill or skillet over medium-high heat.
  4. Cook the chicken for 6-7 minutes per side until fully cooked and slightly charred.
  5. Let the chicken rest for 5 minutes, then slice thinly.
  6. Serve in pita bread, over rice, or in a salad with garlic sauce.

Notes

  • For best flavor, marinate the chicken overnight.
  • You can also bake the chicken at 375°F (190°C) for 25-30 minutes if grilling isn’t an option.
