Description
Chicken Shawarma is a Middle Eastern dish featuring tender, spiced grilled chicken thighs sliced thin and piled high on a plate. It’s perfect for wraps, salads, or served with rice and garlic sauce.

- 1.5 lbs (680g) boneless, skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1/2 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, cumin, paprika, turmeric, coriander, cinnamon, black pepper, and salt.
- Add chicken thighs to the marinade, ensuring they’re fully coated. Cover and refrigerate for at least 2 hours or overnight.
- Preheat grill or skillet over medium-high heat.
- Cook the chicken for 6-7 minutes per side until fully cooked and slightly charred.
- Let the chicken rest for 5 minutes, then slice thinly.
- Serve in pita bread, over rice, or in a salad with garlic sauce.
Notes
- For best flavor, marinate the chicken overnight.
- You can also bake the chicken at 375°F (190°C) for 25-30 minutes if grilling isn’t an option.
