- 2 boneless, skinless chicken breasts, sliced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1/4 cup butter
- 1/4 cup olive oil
- 1/2 cup heavy cream
- 1 bunch asparagus, trimmed
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp lemon juice
- 1 tbsp chopped parsley
Instructions
- Cook rice in chicken broth according to package instructions.
- Heat olive oil in a pan over medium heat and cook chicken until golden brown.
- Add minced garlic and butter to the pan, sauté for 1 minute.
- Stir in heavy cream, parmesan cheese, salt, pepper, and lemon juice. Simmer for 2 minutes.
- Toss asparagus with olive oil, salt, and pepper, then grill for 5 minutes.
- Serve chicken scampi over rice with grilled asparagus on the side. Garnish with parsley.
Notes
- Use fresh garlic for the best flavor.
- Adjust salt and pepper to taste.
- For a lighter version, substitute heavy cream with half-and-half.
