Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup olive oil
  • 1/2 cup heavy cream
  • 1 bunch asparagus, trimmed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp lemon juice
  • 1 tbsp chopped parsley

Instructions

  1. Cook rice in chicken broth according to package instructions.
  2. Heat olive oil in a pan over medium heat and cook chicken until golden brown.
  3. Add minced garlic and butter to the pan, sauté for 1 minute.
  4. Stir in heavy cream, parmesan cheese, salt, pepper, and lemon juice. Simmer for 2 minutes.
  5. Toss asparagus with olive oil, salt, and pepper, then grill for 5 minutes.
  6. Serve chicken scampi over rice with grilled asparagus on the side. Garnish with parsley.
