- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon dried thyme
- 1 lemon, halved
- 4 sprigs fresh rosemary
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken and pat it dry with paper towels.
- Rub the chicken with olive oil, salt, and pepper.
- Sprinkle garlic powder and thyme over the chicken.
- Stuff the cavity with lemon halves and rosemary.
- Place the chicken in a roasting pan.
- Roast for 1.5 hours or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before carving.

- Use fresh herbs for better flavor.
- Try adding vegetables to the roasting pan.
