This easy chicken piccata recipe features tender chicken breasts in a tangy lemon and caper sauce, perfect for a quick weeknight dinner.

- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour, for dredging
- 4 tablespoons olive oil
- 4 tablespoons butter
- 1/2 cup fresh lemon juice
- 1 cup chicken broth
- 1/4 cup capers, rinsed and drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken breasts with salt and pepper. Dredge each breast in flour and shake off excess.
- In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook for about 3-4 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the lemon juice, chicken broth, and capers. Bring to a boil and scrape up any brown bits from the bottom of the pan.
- Return the chicken to the skillet and simmer for about 5 minutes, allowing the sauce to reduce slightly.
- Remove the chicken again and whisk in the remaining 2 tablespoons of butter until melted and smooth.
- Serve the chicken topped with the sauce and garnish with fresh parsley.

- Serve with pasta or rice to soak up the delicious sauce.
- You can substitute chicken breasts with chicken thighs for a richer flavor.
