This easy chicken piccata recipe features tender chicken breasts in a tangy lemon and caper sauce, perfect for a quick weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers, rinsed and drained
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper. Dredge each breast in flour and shake off excess.
  2. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook for about 3-4 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the lemon juice, chicken broth, and capers. Bring to a boil and scrape up any brown bits from the bottom of the pan.
  4. Return the chicken to the skillet and simmer for about 5 minutes, allowing the sauce to reduce slightly.
  5. Remove the chicken again and whisk in the remaining 2 tablespoons of butter until melted and smooth.
  6. Serve the chicken topped with the sauce and garnish with fresh parsley.

Notes

  • Serve with pasta or rice to soak up the delicious sauce.
  • You can substitute chicken breasts with chicken thighs for a richer flavor.
