- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably Italian-style)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
- Olive oil for frying
Instructions
- Preheat your oven to 400°F (200°C).
- Slice each chicken breast in half horizontally to create thinner cutlets. Pound them to an even thickness if necessary.
- In a shallow dish, mix flour with salt and pepper. In another dish, beat the eggs. In a third dish, combine breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
- Dredge each chicken cutlet in flour, shaking off excess, then dip in beaten eggs, and finally coat with the breadcrumb mixture, pressing to adhere.
- Heat olive oil in a skillet over medium-high heat. Fry the chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
- In a baking dish, spread a layer of marinara sauce on the bottom. Place the fried chicken cutlets on top of the sauce. Spoon more marinara sauce over each cutlet and sprinkle with shredded mozzarella cheese.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
