  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably Italian-style)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish
  • Olive oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice each chicken breast in half horizontally to create thinner cutlets. Pound them to an even thickness if necessary.
  3. In a shallow dish, mix flour with salt and pepper. In another dish, beat the eggs. In a third dish, combine breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  4. Dredge each chicken cutlet in flour, shaking off excess, then dip in beaten eggs, and finally coat with the breadcrumb mixture, pressing to adhere.
  5. Heat olive oil in a skillet over medium-high heat. Fry the chicken cutlets for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
  6. In a baking dish, spread a layer of marinara sauce on the bottom. Place the fried chicken cutlets on top of the sauce. Spoon more marinara sauce over each cutlet and sprinkle with shredded mozzarella cheese.
  7. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh basil leaves before serving.
