- 1 medium onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 8 ounces egg noodles
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until vegetables are softened.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken, thyme, bay leaf, salt, and pepper. Reduce heat and simmer for 15 minutes.
- Stir in the egg noodles and cook according to package instructions, usually about 5-7 minutes.
- Remove bay leaf and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- For extra flavor, you can add a splash of lemon juice before serving.
