Description

Homemade chicken noodle soup is a comforting dish made with tender chicken, vegetables, and noodles in a flavorful broth.


Ingredients

  • 1 whole chicken (about 34 lbs)
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, place the whole chicken and cover with chicken broth.
  2. Add carrots, celery, onion, garlic, thyme, and bay leaf.
  3. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove the chicken and let it cool.
  5. Shred the chicken, discarding the skin and bones.
  6. Add egg noodles to the pot and cook until tender.
  7. Return shredded chicken to the pot, season with salt and pepper, and heat through.
