- 8 cups chicken broth
- 2 cups cooked chicken, shredded

- 1 bay leaf
- 8 ounces egg noodles
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add chicken broth, shredded chicken, thyme, and bay leaf. Bring to a boil.
- Add egg noodles and cook until tender, about 7-10 minutes.
- Season with salt and pepper. Remove bay leaf before serving.

- Use leftover roast chicken for quicker preparation.
- Add vegetables like peas or corn for extra nutrition.
