- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 oz mushrooms, sliced
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- Pound chicken breasts to an even thickness.
- Mix flour, salt, and pepper on a plate.
- Dredge chicken in the flour mixture.
- Heat olive oil and butter in a skillet.
- Cook chicken until golden brown, then set aside.
- Sauté mushrooms in the same skillet.
- Add Marsala wine and chicken broth, simmer for 5 minutes.
- Stir in heavy cream.
- Return chicken to the skillet and cook until heated through.
- Sprinkle with parsley before serving.
