  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 oz mushrooms, sliced
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pound chicken breasts to an even thickness.
  2. Mix flour, salt, and pepper on a plate.
  3. Dredge chicken in the flour mixture.
  4. Heat olive oil and butter in a skillet.
  5. Cook chicken until golden brown, then set aside.
  6. Sauté mushrooms in the same skillet.
  7. Add Marsala wine and chicken broth, simmer for 5 minutes.
  8. Stir in heavy cream.
  9. Return chicken to the skillet and cook until heated through.
  10. Sprinkle with parsley before serving.
