- 8 oz egg noodles
- 1 lb boneless, skinless chicken breast, sliced into thin strips
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup broccoli florets
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)
- Salt and pepper to taste
Instructions
- Cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- In the same skillet, add bell peppers, carrots, and broccoli. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Add minced garlic and ginger, and cook for an additional 1 minute until fragrant.
- Return the cooked chicken to the skillet with the vegetables.
- Add the cooked egg noodles to the skillet, followed by soy sauce, oyster sauce, sesame oil, and cornstarch mixture if using. Toss everything together until well combined and heated through.
- Season with salt and pepper to taste. Serve hot.
