  • 2 cups cooked jasmine rice, chilled
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 eggs, lightly beaten
  • 3 green onions, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and stir-fry for about 2-3 minutes until tender.
  3. Push the vegetables to the side of the pan and pour in the beaten eggs. Scramble until fully cooked, then mix with the vegetables.
  4. Add the remaining vegetable oil and the chilled rice to the pan. Stir-fry for about 5 minutes until heated through.
  5. Add the cooked chicken, soy sauce, sesame oil, and green onions. Mix well and cook for another 2-3 minutes.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • For best results, use day-old rice to prevent mushiness.
  • Feel free to customize with your favorite vegetables or proteins.
