- 2 cups cooked jasmine rice, chilled
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 eggs, lightly beaten
- 3 green onions, sliced
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the mixed vegetables and stir-fry for about 2-3 minutes until tender.
- Push the vegetables to the side of the pan and pour in the beaten eggs. Scramble until fully cooked, then mix with the vegetables.
- Add the remaining vegetable oil and the chilled rice to the pan. Stir-fry for about 5 minutes until heated through.
- Add the cooked chicken, soy sauce, sesame oil, and green onions. Mix well and cook for another 2-3 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
- For best results, use day-old rice to prevent mushiness.
- Feel free to customize with your favorite vegetables or proteins.
