- 1 cup diced chicken breast
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium heat.
- Add chicken and cook until browned.
- Push chicken to the side and scramble the eggs in the skillet.
- Add mixed vegetables and cook until tender.
- Stir in the rice and soy sauce, mixing well.
- Add green onions and season with salt and pepper.
- Serve hot.
