  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Flatten the chicken breasts to an even thickness.
  2. Season the chicken with salt and pepper.
  3. Dredge each chicken breast in flour, shaking off excess.
  4. In a bowl, whisk together eggs and milk.
  5. Dip the floured chicken into the egg mixture.
  6. Heat olive oil and butter in a skillet over medium heat.
  7. Cook the chicken until golden brown, about 5-7 minutes per side.
  8. Remove chicken from the skillet and set aside.
  9. Add chicken broth and lemon juice to the skillet, scraping up any bits.
  10. Return the chicken to the skillet and simmer for 2-3 minutes.
