- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1/4 cup olive oil
- 1/4 cup butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Flatten the chicken breasts to an even thickness.
- Season the chicken with salt and pepper.
- Dredge each chicken breast in flour, shaking off excess.
- In a bowl, whisk together eggs and milk.
- Dip the floured chicken into the egg mixture.
- Heat olive oil and butter in a skillet over medium heat.
- Cook the chicken until golden brown, about 5-7 minutes per side.
- Remove chicken from the skillet and set aside.
- Add chicken broth and lemon juice to the skillet, scraping up any bits.
- Return the chicken to the skillet and simmer for 2-3 minutes.
- Garnish with parsley and serve.
