- 2 chicken fillets (about 200g each)
- 50g butter
- 1 tbsp chopped fresh herbs (parsley, thyme, or rosemary)
- 1 lemon (juiced and zest)
- 500g potatoes (peeled and chopped)
- 50ml milk
- Salt and pepper to taste
Instructions
- Season chicken fillets with salt and pepper.
- Melt butter in a pan over medium heat.
- Cook chicken fillets for 5-6 minutes per side until golden.
- Add herbs and lemon juice, cook for 1 more minute.
- Boil potatoes until tender, drain.
- Mash potatoes with milk, salt, and pepper.
- Serve chicken fillets with mashed potatoes.

- Adjust seasoning to taste.
- Cook chicken until internal temperature reaches 75°C.
