Description

A delicious and easy-to-make pasta bake combining the flavors of chicken fajitas with melted cheese and tender pasta.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz penne pasta
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions, then drain.
  3. Heat olive oil in a pan over medium heat.
  4. Add chicken, peppers, onion, and garlic. Cook until chicken is done.
  5. Stir in chili powder, cumin, paprika, salt, and black pepper.
  6. Mix cooked pasta with chicken and vegetables.
  7. Stir in sour cream and half the cheese.
  8. Transfer to a baking dish and top with remaining cheese.
  9. Bake for 15 minutes or until cheese is bubbly.
  10. Garnish with cilantro before serving.

  • Use any pasta shape you prefer.
  • Add jalapeños for extra heat.
