Description
Chicken enchiladas are rolled tortillas filled with chicken and topped with sauce and cheese.
Ingredients

- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 8 corn tortillas
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1/2 cup sour cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix shredded chicken with half of the enchilada sauce.
- Warm the tortillas in a pan until soft.
- Fill each tortilla with the chicken mixture and roll it up.
- Place the rolled tortillas in a baking dish.
- Pour the remaining enchilada sauce over the top.
- Sprinkle cheese and onions on top.
- Bake for 20 minutes until cheese is melted.
Notes
- Serve with sour cream on the side.
- Can add beans or vegetables for extra filling.
