Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 cups mixed vegetables (broccoli, carrots, bell peppers)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt, pepper, and oregano. Add to the skillet and sear for 5-6 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in lemon juice, lemon zest, and chicken broth. Bring to a simmer.
  5. Add the chicken back to the skillet and spoon the sauce over it. Cook for an additional 2-3 minutes.
  6. In a separate pot, steam mixed vegetables until tender, about 5 minutes.
  7. Serve chicken with the sauce and steamed vegetables on the side.
