This quick and flavorful lemon garlic chicken is perfect for busy weeknights. Juicy chicken breasts are seared to perfection and tossed with a bright lemon garlic sauce, served with a side of steamed vegetables.

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup chicken broth
- 2 cups mixed vegetables (broccoli, carrots, bell peppers)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt, pepper, and oregano. Add to the skillet and sear for 5-6 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Stir in lemon juice, lemon zest, and chicken broth. Bring to a simmer.
- Add the chicken back to the skillet and spoon the sauce over it. Cook for an additional 2-3 minutes.
- In a separate pot, steam mixed vegetables until tender, about 5 minutes.
- Serve chicken with the sauce and steamed vegetables on the side.
