  • 1 cup coconut milk

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Add chicken pieces and cook until browned.
  4. Add tomatoes, curry powder, turmeric, and cumin. Stir well.
  5. Pour in coconut milk and stir to combine.
  6. Simmer for 20-25 minutes until chicken is cooked through.
  7. Season with salt as needed.
  8. Garnish with cilantro before serving.
