- 4 cups chicken broth
- 2 cups heavy cream
- 1 cup shredded Swiss cheese
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
- Add cubed chicken and cook until browned and cooked through, about 5-7 minutes.
- Stir in diced ham and cook for an additional 2 minutes.
- Sprinkle the flour over the chicken mixture and stir to coat.
- Gradually pour in the chicken broth, stirring constantly to avoid lumps. Bring to a simmer.
- Once simmering, add heavy cream and thyme. Cook for 5-10 minutes until the soup thickens.
- Stir in shredded Swiss cheese until melted and combined. Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
