- 1 pound boneless, skinless chicken breasts, cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 cup carrots, shredded
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- Sesame seeds and green onions for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add the cubed chicken and season with garlic powder, onion powder, salt, and pepper.
- Cook the chicken until browned and cooked through, about 6-8 minutes.
- Add the broccoli, bell peppers, and carrots to the skillet. Stir-fry the vegetables with the chicken for another 5-7 minutes until they are tender.
- In a small bowl, whisk together soy sauce, honey, and sesame oil. Pour this sauce over the chicken and vegetables in the skillet, stirring to combine.
- Cook for an additional 2-3 minutes until everything is heated through and the sauce is slightly thickened.
- Serve the chicken and vegetable mixture over a bed of rice. Garnish with sesame seeds and chopped green onions if desired.
