A creamy and savory pasta dish featuring tender chicken, earthy mushrooms, and a rich sauce, perfect for a comforting weeknight dinner.

- 8 oz (225 g) pasta of your choice (fettuccine, penne, or spaghetti)
- 1 lb (450 g) chicken breast, diced
- 2 cups (150 g) mushrooms, sliced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1/2 cup (120 ml) chicken broth
- 1/2 cup (50 g) grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- In the same skillet, add the onions and garlic. Sauté until onions are translucent, about 3-4 minutes.
- Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-6 minutes.
- Return the cooked chicken to the skillet. Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and Parmesan cheese, mixing until the cheese is melted and the sauce is smooth. Season with additional salt and pepper, if needed.
- Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for another 2-3 minutes to heat through.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add spinach or other veggies for added nutrition.
- For a lighter version, substitute heavy cream with half-and-half or milk.
