Ingredients

  • 8 oz (225 g) pasta of your choice (fettuccine, penne, or spaghetti)
  • 1 lb (450 g) chicken breast, diced
  • 2 cups (150 g) mushrooms, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth
  • 1/2 cup (50 g) grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the onions and garlic. Sauté until onions are translucent, about 3-4 minutes.
  4. Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-6 minutes.
  5. Return the cooked chicken to the skillet. Pour in the chicken broth and bring to a simmer.
  6. Stir in the heavy cream and Parmesan cheese, mixing until the cheese is melted and the sauce is smooth. Season with additional salt and pepper, if needed.
  7. Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for another 2-3 minutes to heat through.
  8. Garnish with fresh parsley before serving.

Notes

  • Feel free to add spinach or other veggies for added nutrition.
  • For a lighter version, substitute heavy cream with half-and-half or milk.
